HEIRLOOM. Aleppo, also known as Halaby, peppers are the classic spicy pepper used in Syrian cooking. They have a distinctive, complex flavor that might be described as fruity with cumin-like undertones, and moderate heat. Traditionally, these peppers are most often dried and used for chili flakes or powder, but they are also great roasted or chopped and added to dishes fresh. Elongated peppers grow to four to six inches long, and ripen to a deep, almost burgundy-red. Plants can reach four feet in height, and may benefit from staking. This wonderful variety is listed in the Slow Food Ark of Taste, but is in danger of disappearing in its homeland due to prolonged conflict in the region and the effects of climate change.
