Cut from the top of the hip bone, this roast is one of the more tender cuts from the round. It is versatile and good as an oven roast, slow cooked or as a pot roast. More fat than a bottom round rump roast.
Similar to the Eye Round Roast, this cut is best for braising. If you want to roast it dry, just don’t overcook it – no more than medium-rare.
