The name pansy is derived from the French word pensee’ meaning “thought”, and so it was named because the blotched flower resembles a human face. Because of this the pansy has long been a symbol of free-thought. Pansy flowers are edible and when temps drop below 25 degrees their foliage will wilt and turn a grey – green as a defense from the cold.
