Description
This is a very specific endoprotease that helps to prevent chill haze in beer. The endoprotease hydrolyzes haze-active polypeptides where the hydrogen bonding that causes chill haze occurs. This is to be used at the beginning of fermentation and is made with DSM Brewers Clarex®. Clarity-Ferm has been also found to reduce gluten in beer made with barley.
