The tightly formed, compact crisp firm leaves on the outside are fringed and heavily ruffled giving way to large solid hearts that are blanched to silvery white color. The sweetest leaves are in the center. The mild flavored and crunchy texture of the tasty exterior leaves and heart are perfect for salads, sandwiches or as a garnish.
